Pineapple Yam Puff

Ingredients

  • 1 (20 oz.) can crushed pineapple in syrup
  • 3 c. cooked mashed yams (about 1 1/4 lb.)
  • 3 eggs
  • 2/3 c. whipping cream (unwhipped)
  • 1/2 c. butter or margarine, softened
  • 1/4 c. brown sugar, packed
  • 1 Tbsp. fresh grated orange peel

Instructions

  1. Drain and discard 1 cup syrup from pineapple.
  2. Beat yams with remaining ingredients until smooth.
  3. Stir in pineapple.
  4. Pour into greased 2-quart casserole dish.
  5. Bake in a 375° oven for 50 to 60 minutes until puffed and lightly browned.
  6. Serve with pork or poultry.
  7. A good Thanksgiving dish.
