Ingredients

  • 56 Ritz crackers
  • 1/2 cup margarine
  • 2 (3.5 oz.) boxes pistachio pudding
  • 2 cups milk
  • 2 pt. vanilla ice cream, softened
  • 13 oz. Cool Whip
  • 1 cup pistachios

Instructions

  1. Use a 9 x 13-inch pan.
  2. Crush Ritz crackers into crumbs.
  3. Melt butter.
  4. Spread the cracker crumbs evenly in the pan to form the crust.
  5. Bake at 325°F (160°C) for 10 minutes, then let cool.
  6. Mix pistachio pudding mix, milk, and softened vanilla ice cream until well combined.
  7. Pour the pudding mixture onto the cooled crust.
  8. Cover with Cool Whip.
  9. Sprinkle with chopped pistachios and cherries on top.
