Ingredients

  • 1/4 lb vermicelli broken

Instructions

  1. In a large deep bowl or soup tureen, combine basil, garlic, and olive oil.
  2. Stir well so the oil coats the basil and let stand while preparing the soup.
  3. In a large pot, bring water to a boil and add potatoes, green beans, and peeled chopped tomatoes.
  4. Add salt and pepper, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  5. Add broken vermicelli and cook until tender, about 10 minutes.
  6. Stir in shredded cheese just before serving.
