Ingredients

  • 2 lb. fresh spinach
  • 1/2 lb. Feta cheese
  • 1 c. margarine, melted
  • 4 eggs
  • 1 roll phyllo dough

Instructions

  1. Wash spinach and cut off stems.
  2. Squeeze out water from the spinach.
  3. Roll the spinach tightly and cut into fine strips.
  4. In a large bowl, combine spinach, eggs, and Feta cheese.
  5. Melt margarine and brush it onto the phyllo dough sheets.
  6. Layer about 4 sheets of phyllo, brushing each with margarine.
  7. Spread a layer of the spinach mixture over the layered phyllo.
  8. Repeat layering with remaining phyllo sheets and spinach mixture for about 4 more layers.
  9. Gently roll up the edges of the layered pastry.
  10. Bake at 350°F (175°C) for 1 hour until golden and cooked through.
