Ingredients

  • 2 plantains (very ripe, blackened)
  • 1 large sweet potato, peeled
  • 3 granny smith apples, diced
  • 3 tablespoons soy margarine or 3 tablespoons margarine, melted
  • 12 cup firmly packed brown sugar
  • 12 teaspoon ground cinnamon
  • 12 teaspoon ground ginger
  • 12 teaspoon salt
  • 34 cup water

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cut ends off plantains, and halve lengthwise.
  3. Remove peel by putting thumb between fruit and peel, and pulling thumb down length of fruit.
  4. Cut plantain on bias into 1/2 inch pieces.
  5. Quarter sweet potato lengthwise.
  6. Cut each quarter into 1/4 inch pieces.
  7. Mix apples, plantains and sweet potatoes in large bowl.
  8. In separate bowl, combine melted margarine, brown sugar, cinnamon, ginger, salt and water.
  9. Toss sweet potato mixture with brown sugar mixture, and place into ovenproof dish.
  10. Bake for 20 minutes covered.
  11. Uncover, and bake 20 minutes more.
