Ingredients

  • trout
  • water
  • white wine
  • salt
  • peppercorns
  • bay leaf
  • onion
  • 1 tsp. thyme or dill

Instructions

  1. In a large shallow pan, put enough water and white wine (half and half) to cover the fish.
  2. Add salt to taste, peppercorns, bay leaf, onion, and thyme or dill.
  3. Bring the liquid to a boil and cook for 10 to 15 minutes.
  4. Add the fish and enough white wine to cover them if necessary.
  5. Poach gently, simmering without boiling, until the fish is done, approximately 5 minutes.
