Poblano Chicken & Corn Chowder
Ingredients
- 2 (12 1/2 ounce) cans white chicken meat packed in water ⓘ
- 2 large baking potatoes ⓘ
- 2 cups frozen corn kernels ⓘ
- 1/8 cup white onion, diced ⓘ
- 1/8 cup bell pepper, diced ⓘ
- 1/2 cup poblano pepper, diced ⓘ
- 1 chicken bouillon cube
- 2 cups chicken broth ⓘ
- 2 cups heavy cream ⓘ
- 2 cups milk ⓘ
- 2 teaspoons sugar
- 2 teaspoons hot sauce ⓘ
Instructions
- Cook and dice the baking potatoes.
- Bring the chicken stock to a boil in a large pot.
- Drain the canned chicken and add to the pot.
- Add all other ingredients except for hot sauce, let simmer for 40 minutes.
- Add hot sauce and simmer 5 more minutes.
