Poblano Chicken & Corn Chowder

Ingredients

  • 2 (12 1/2 ounce) cans white chicken meat packed in water
  • 2 large baking potatoes
  • 2 cups frozen corn kernels
  • 1/8 cup white onion, diced
  • 1/8 cup bell pepper, diced
  • 1/2 cup poblano pepper, diced
  • 1 chicken bouillon cube
  • 2 cups chicken broth
  • 2 cups heavy cream
  • 2 cups milk
  • 2 teaspoons sugar
  • 2 teaspoons hot sauce

Instructions

  1. Cook and dice the baking potatoes.
  2. Bring the chicken stock to a boil in a large pot.
  3. Drain the canned chicken and add to the pot.
  4. Add all other ingredients except for hot sauce, let simmer for 40 minutes.
  5. Add hot sauce and simmer 5 more minutes.
