Ingredients

  • 1/4 c. unsalted butter
  • 1/2 c. onion, chopped fine
  • 5 c. chicken broth (low salt)
  • 2 c. yellow cornmeal
  • 1 c. half and half, warmed
  • 5 Tbsp. Parmesan cheese, freshly grated
  • 1 tsp. salt

Instructions

  1. Preheat oven to 350° and generously butter a shallow 2-quart baking dish.
