Ingredients

  • 1 c. yellow cornmeal
  • 2 tsp. salt
  • 1 lb. extended ground beef
  • 1/3 c. chopped onion
  • 2 cloves garlic
  • 1 (6 oz.) can tomato paste
  • 1 (1 lb.) can tomatoes
  • 1 tsp. sugar
  • 1/2 tsp. oregano leaves
  • dash of pepper
  • 1/2 c. finely shredded sharp Cheddar cheese

Instructions

  1. Mix 1 cup cold water, the cornmeal, and 1 teaspoon salt in a bowl.
  2. Bring 2 1/2 cups water to a boil in a heavy saucepan.
  3. Stir in the cornmeal mixture and bring again to a boil, stirring until thickened.
  4. Cover and simmer, stirring occasionally, about 5 minutes.
  5. Pour into a lightly oiled 8-inch square pan and chill several hours, overnight or until firm.
