Ingredients

  • 2 c. water
  • 1/2 c. plus 2 Tbsp. yellow cornmeal
  • 1/4 tsp. salt
  • 1/2 c. grated Mozzarella cheese
  • 1/2 c. Parmesan cheese

Instructions

  1. Whip water, cornmeal, and salt together in a 3-quart microwave bowl until blended.
  2. Cover and cook on High for 5 minutes.
  3. Remove from microwave and whip until smooth, then recover and cook for 5 minutes.
  4. Remove from microwave and whip again to incorporate.
  5. Recover and cook for an additional 3 minutes.
  6. Let stand for 1 minute, then whip in the grated mozzarella and Parmesan cheeses until melted and smooth.
  7. Top with tomato sauce before serving.
