Ingredients

  • 1 eggplant
  • sliced Provolone cheese
  • fresh basil
  • marinara or spaghetti sauce

Instructions

  1. Trim the skin off the eggplant and slice into 1-inch thick rounds.
  2. Liberally oil a cookie sheet with olive oil.
  3. Place eggplant slices on the prepared cookie sheet and bake in a 375°F oven for approximately 7 to 10 minutes.
  4. Remove the cookie sheet from the oven and top each eggplant round with 2 tablespoons of marinara sauce.
  5. Return the cookie sheet to the oven and bake for an additional 5 minutes.
  6. Remove from the oven and top each round with 1 or 2 fresh basil leaves and sliced Provolone cheese (approximately 1 ounce each).
  7. Turn off the oven.
  8. Return the cookie sheet to the oven until the cheese is melted.
