San Perido Eggplant

Instructions
- Trim the skin off the eggplant and slice into 1-inch thick rounds.
- Liberally oil a cookie sheet with olive oil.
- Place eggplant slices on the prepared cookie sheet and bake in a 375°F oven for approximately 7 to 10 minutes.
- Remove the cookie sheet from the oven and top each eggplant round with 2 tablespoons of marinara sauce.
- Return the cookie sheet to the oven and bake for an additional 5 minutes.
- Remove from the oven and top each round with 1 or 2 fresh basil leaves and sliced Provolone cheese (approximately 1 ounce each).
- Turn off the oven.
- Return the cookie sheet to the oven until the cheese is melted.
