Polish doughnuts are light, fluffy treats with a hint of orange zest, perfect for sharing during celebrations or as a sweet breakfast delight.

Ingredients

  • 16 oz. milk
  • 2 oz. cake yeast or 4 dry yeast packets
  • 2 cups flour
  • 4 egg yolks
  • 1 egg
  • 1/2 cup sugar
  • 1/2 cup melted shortening
  • 1/2 teaspoon vanilla
  • 1 teaspoon salt
  • grated rind from 1 orange or 1 1/2 teaspoons orange zest

Instructions

  1. Scald milk and cool to 120°F.
  2. Add yeast and 2 cups of flour to the cooled milk and yeast mixture.
  3. Let this mixture stand for 30 minutes to form a sponge.
  4. In a separate bowl, beat the egg yolks and egg together.
  5. Add sugar, melted shortening, vanilla, salt, and grated orange rind or zest to the egg mixture.
  6. Combine the egg mixture with the sponge and mix well.
  7. Gradually add the remaining flour to form a soft dough.
  8. Knead the dough until smooth and elastic.
  9. Cover and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  10. Turn the dough onto a floured surface and roll out to about 1/2 inch thickness.
  11. Cut into doughnut shapes using a doughnut cutter or a round cutter with a smaller cutter for the hole.
  12. Heat oil in a deep fryer or large pan to 375°F.
  13. Fry the doughnuts until golden brown, about 2-3 minutes per side.
  14. Drain on paper towels and serve warm or cooled.
