Ingredients

  • 3 eggs
  • 1/2 tsp. salt
  • 2 c. sugar
  • 1 tsp. vanilla
  • 3/4 c. cooking oil
  • 1 c. buttermilk
  • 2 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. soda
  • 1 c. preserves
  • 3/4 c. black walnuts or other nuts

Instructions

  1. Mix eggs, salt, sugar, vanilla, cooking oil, and buttermilk in order given.
  2. Add flour, cinnamon, nutmeg, and soda to the mixture and stir well.
  3. Fold in preserves and black walnuts or other nuts.
  4. Pour batter into a well-greased tube pan.
  5. Bake in a preheated oven at 300°F (150°C) for about 2 hours until a toothpick inserted in the center comes out clean.
