Ingredients

  • 1 pkg. yeast
  • 1/4 cup warm water
  • 1/4 cup sugar
  • 1/4 cup shortening
  • 1 teaspoon salt
  • 2/3 cup hot scalded milk, cooled to lukewarm
  • 2 eggs
  • 4 cups sifted flour

Instructions

  1. Combine the yeast and warm water in a mixing bowl and let it sit until foamy.
  2. Add sugar, shortening, salt, and cooled milk to the yeast mixture and mix well.
  3. Beat in the eggs, then gradually add the sifted flour, beating well after each addition until the dough is smooth.
  4. Cover the bowl with a clean cloth and let the dough rise in a warm place for 15 minutes.
  5. Turn the risen dough onto a floured surface and knead lightly to coat with flour.
  6. Roll out the dough into a rectangle and spread it with your chosen filling, leaving a 1/3 inch border.
  7. Starting from one edge, roll up the dough as for a jelly roll, sealing the edge to form a roll.
  8. Place the roll seam-side down on a greased baking sheet.
  9. Brush the top with cream and cover with a cloth, then let it rise in a warm place until light and doubled in size.
  10. Bake in a preheated oven at 375°F (190°C) for 25 to 30 minutes until golden brown.
