  • 7 oz. chocolate and cocoa
  • 6 eggs
  • 2 oz. liqueur, cocoa or coffee
  • 8 oz. chopped nuts

Instructions

  1. Using an electric mixer, beat the butter with the confectioners sugar.
  2. Add the 6 egg yolks and beat well.
  3. Beat in the chocolate, liqueur, and chopped nuts.
  4. In another bowl, carefully beat the egg whites until stiff peaks form.
  5. Fold the chocolate mixture into the beaten egg whites gently.
  6. Pour the mixture into an 8-inch tart pan with a removable bottom.
  7. Cover and freeze until firm.
  8. Half an hour before serving, move the parfait to the refrigerator to soften slightly.
  9. Garnish with additional nuts, fruits, or whipped cream before serving.

Tips & Substitutions

For a smoother texture, ensure your butter is at room temperature before mixing. If you prefer less sweetness, reduce the confectioners sugar slightly or use unsweetened cocoa. For a nut-free version, consider adding crushed cookies or granola to the mixture instead. You could also substitute liqueur with a splash of strong coffee or espresso for a different flavor profile.

Serving Suggestions

Serve the parfait chilled, garnished with additional chopped nuts or a dollop of whipped cream for added richness. You can also pair it with a selection of fresh berries for a refreshing contrast. This dessert pairs beautifully with an Assorted Fruit Buffet, providing a delightful combination of flavors and textures.

Storage & Reheating

Store any leftovers in an airtight container in the freezer for up to two weeks. To enjoy later, move the parfait to the refrigerator for a few hours to soften before serving. Avoid refreezing once it has been thawed, as this may affect its texture and flavor.
