  1. Gather poke greens in spring and wash them thoroughly.
  2. Parboil greens, rinse, then boil again.
  3. Add 2 tablespoons of soda to water, rinse greens well again.
  4. Squeeze out all excess water from greens.
  5. Put greens and chopped onions in a skillet with a fair amount of Crisco or cooking fat.
  6. Cook until onions are translucent.
  7. Scramble 3 or 4 eggs and mix with the cooked greens and onions.
