Ingredients

  • 6 large red peppers
  • 2 cups cooked rice
  • 1/2 pound ground ham
  • 1 medium onion, chopped
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • 1 teaspoon salt
  • pepper to taste
  • 1 (16 oz) can pineapple chunks (not drained)
  • 1 medium onion, cut into chunks
  • 1/2 green pepper, cut into chunks
  • 2 Roma tomatoes, quartered

Instructions

  1. Remove tops and seeds from the peppers and set aside.
  2. Combine cooked rice, ground ham, chopped onion, ground coriander, ground ginger, salt, and pepper in a bowl.
  3. Stuff the prepared peppers with the rice mixture.
  4. Place the stuffed peppers upright in a shallow baking pan.
  5. In a separate pot, combine undrained pineapple chunks, chopped onion, green pepper chunks, and quartered tomatoes.
  6. Heat the mixture until boiling.
  7. Add a cornstarch slurry to thicken the sauce.
  8. Stir until the sauce thickens.
  9. Pour the pineapple sauce over the stuffed peppers in the baking pan.
  10. Bake at 375°F (190°C) for 30 minutes.
