A hearty slow-cooked chuck roast topped with creamy mushroom soup and onions, finished with a horseradish sour cream spread—perfect for comforting family dinners.

Ingredients

  • 3 lb chuck roast
  • 2 cans cream of mushroom soup
  • 2 large onions
  • 1/2 pt sour cream
  • horseradish
  • salt
  • pepper

Instructions

  1. Brown the chuck roast in hot oil on the stove.
  2. Place the roast in a baking pan and season with salt and pepper to taste.
  3. Pour the cream of mushroom soup over the top of the roast.
  4. Spread the soup evenly over the roast.
  5. Separate the onion slices into rings and lay over the top of the roast.
  6. Cover the baking pan with tinfoil.
  7. Bake in a 325°F (160°C) oven for 3 hours.
  8. Remove the foil from the pan.
  9. Mix horseradish to taste with sour cream and spread over the roast, scraping off the onions first.
  10. Broil until bubbly.
  11. Serve with rice or boiled potatoes.
