Poor Boy Chuck
A hearty slow-cooked chuck roast topped with creamy mushroom soup and onions, finished with a horseradish sour cream spread—perfect for comforting family dinners.

Instructions
- Brown the chuck roast in hot oil on the stove.
- Place the roast in a baking pan and season with salt and pepper to taste.
- Pour the cream of mushroom soup over the top of the roast.
- Spread the soup evenly over the roast.
- Separate the onion slices into rings and lay over the top of the roast.
- Cover the baking pan with tinfoil.
- Bake in a 325°F (160°C) oven for 3 hours.
- Remove the foil from the pan.
- Mix horseradish to taste with sour cream and spread over the roast, scraping off the onions first.
- Broil until bubbly.
- Serve with rice or boiled potatoes.
