- Preheat the oven to 350°F (175°C).
- Grease and flour two 9x5-inch loaf pans.
- In a large bowl, combine the yellow cake mix, instant toasted coconut pudding (or regular), salad oil, eggs, poppy seeds, and hot water; mix until smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
