Ingredients

  • 1/2 c. boiling water
  • 12 dried apricots
  • 6 pork chops (3/4-inch thick)
  • 1 tsp. salt
  • dash of pepper
  • 1/4 tsp. thyme
  • 1/4 c. maple syrup

Instructions

  1. Pour boiling water over apricots; cool to room temperature. Drain, reserving liquid.
  2. Trim fat from pork chops on both sides. Heat fat in skillet.
  3. Brown chops on both sides in hot fat. Combine seasonings, syrup and reserved liquid; pour over chops. Place apricots on top of chops.
  4. Cover; cook over low heat for 1 hour.
  5. Add a little water, if necessary, to prevent sticking. Cook, uncovered, for last few minutes, spooning sauce over chops.
