- Pour boiling water over apricots; cool to room temperature. Drain, reserving liquid.
- Trim fat from pork chops on both sides. Heat fat in skillet.
- Brown chops on both sides in hot fat. Combine seasonings, syrup and reserved liquid; pour over chops. Place apricots on top of chops.
- Cover; cook over low heat for 1 hour.
- Add a little water, if necessary, to prevent sticking. Cook, uncovered, for last few minutes, spooning sauce over chops.
