Pork Cutlets Diane

Ingredients

  • 1 lb. pork, cut across the grain into 8 cutlets (may also use pork chops)
  • 2 tsp. lemon pepper
  • 2 Tbsp. butter
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Dijon-style mustard
  • 1 Tbsp. parsley, minced

Instructions

  1. Press each cutlet into 1-inch thickness.
  2. Sprinkle surfaces of cutlets with lemon pepper.
  3. Heat butter in heavy skillet and cook cutlets 3 to 4 minutes on each side.
  4. Remove meat to warm serving platter.
  5. Add lemon juice, Worcestershire sauce and mustard to skillet.
  6. Cook, stirring with pan juices, until heated through. Pour sauce over the meat.
  7. Sprinkle with parsley.
