Ingredients

  • 7 medium potatoes
  • salt and pepper
  • 1 can tomatoes
  • 1 onion
  • 1 Tbsp shortening
  • 1 tsp sugar
  • 6 pork chops

Instructions

  1. Wash and pare the potatoes, then cut them into thin slices.
  2. Cook the tomatoes, sliced onion, sugar, salt, pepper, and shortening together for 10 minutes to create a sauce.
  3. Layer a portion of potato slices in a baking dish and cover with some of the tomato mixture.
  4. Repeat layering potatoes and tomato mixture until all ingredients are used.
  5. Trim off excess fat from the pork chops and lay them on top of the layered potatoes.
  6. Sprinkle the pork chops with salt and pepper.
  7. Bake in a preheated oven at 325°F (160°C) for 1 hour until the pork is cooked through and the potatoes are tender.
