Juicy pork tenderloins simmered in a savory tomato, garlic, onion, and pepper sauce, perfect for hearty family dinners or cozy gatherings with pasta.

Ingredients

  • 1 boneless pork roast, sliced thin
  • 1 large can whole tomatoes
  • 3 cloves garlic
  • rosemary
  • thyme
  • 1 red pepper, sliced
  • 2 to 3 onions, sliced
  • olive oil

Instructions

  1. Saute thinly sliced pork in 3 tablespoons of olive oil until browned.
  2. Remove the pork from the pan and set aside.
  3. Saute sliced onions and red pepper in the same pan.
  4. Add garlic, rosemary, and thyme to the vegetables.
  5. Add the whole can of tomatoes to the pan and mix with the spices, onions, and pepper.
  6. Return the pork to the sauce and simmer for about 20 minutes.
  7. Serve the pork and sauce over fresh angel hair pasta.
