Spinach Pie Without Crust

Ingredients

  • 3 smoked pork chops, diced
  • 2 large onions, finely chopped
  • 3 Tbsp. olive oil
  • 2 packages frozen spinach, cooked and drained
  • 1 cup Ricotta cheese
  • 1 1/2 cups Parmesan cheese
  • 4 eggs, slightly beaten
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet.
  2. Saute chopped onions until translucent.
  3. Combine cooked and drained spinach with the sautéed onions and let cool.
  4. Add diced smoked pork chops, grated Parmesan cheese, ricotta cheese, beaten eggs, salt, and pepper to the spinach mixture.
  5. Grease an 8 x 13-inch Pyrex dish and dust with bread crumbs.
  6. Pour the mixture into the prepared dish.
  7. Bake at 425°F for 40 minutes.
  8. Reheat at 375°F, covered, for 40 minutes before serving.
  9. Cut into bite-sized squares and serve.
