Pork Vegetable Bake

A hearty pork vegetable bake featuring tender steaks, flavorful onion and soy sauce, and roasted potatoes and carrots, perfect for a satisfying family dinner.

Ingredients

  • 4 medium potatoes, pared and cut into 1/4-inch slices
  • 1 large carrot, pared and sliced
  • 4 pork steaks, 1/2-inch thick
  • 1/2 cup water
  • 1/2 envelope dry onion soup mix
  • 2 tablespoons soy sauce

Instructions

  1. Place potatoes and carrots in the bottom of a 9 x 13-inch baking dish.
  2. Trim fat from the pork steaks.
  3. In a large skillet, cook pork trimmings until about 2 tablespoons of oil accumulate.
  4. Discard trimmings. In hot oil, brown the steaks well on both sides.
  5. In a small saucepan, combine water, dry onion soup mix, and soy sauce; bring to a boil.
  6. Spoon half of the soup mixture over the potatoes and carrots.
  7. Top with the steaks and spoon the remaining soup mixture on top.
  8. Cover and bake in a preheated oven at 350°F for 1 hour.
  9. Uncover and bake for an additional 10 minutes.
