  1. Skim fat from roasting pan juices, reserving 1/4 cup fat, and deglaze the pan with Port over moderately high heat, scraping up brown bits.
  2. Bring the Port to a boil and remove the pan from heat.
  3. In a saucepan, whisk together the reserved fat and flour, and whisk over moderately low heat for 3 minutes.
  4. Add the Port mixture and broth to the saucepan.
  5. Simmer and whisk for 10 minutes.
  6. Stir in lemon juice, salt, and pepper to taste.
  7. Transfer the gravy to a heated gravy boat.
  8. Garnish with fresh thyme, parsley sprigs, and apple slices.
