- Cut the pork roast into 2 x 2-inch pieces and add all ingredients to a large covered airtight bowl.
- Mix well and refrigerate for a couple of days.
- After one day in the refrigerator, mix the meat with your hand wearing a plastic glove.
- The next day, mix again and let it set in the fridge for a few more hours.
- Fry a few pieces and taste, then add more salt if needed.
