Ingredients

  • 1 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup mashed potatoes
  • 3 tablespoons shortening

Instructions

  1. Combine dry ingredients; cut in shortening until mixture resembles coarse meal.
  2. Add mashed potatoes, stirring lightly.
  3. Add milk and stir until a soft dough is formed.
  4. Turn the dough lightly 10 to 12 times.
  5. Roll dough to 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.
  6. Place biscuits on a lightly greased baking sheet.
  7. Bake at 400°F for 15 minutes or until lightly browned.
