- Preheat oven to 425°F.
- Grease a skillet with 3 tablespoons butter.
- Use a tight-fitting cover for the skillet.
- Toss sliced potatoes with salt and pepper.
- Layer one-third of the potato slices in a circle around the bottom and sides of the skillet.
- Dot the layered potatoes with butter.
- Repeat the layering and dotting two more times.
- Over high heat, cook the potatoes for 3 minutes.
- Then bake, covered, for 30 minutes.
- Place foil under the skillet to catch overflow.
- Remove the cover and bake for an additional 5 minutes.
- Let stand for 5 minutes.
- Invert the skillet onto a serving dish to serve.
