Ingredients

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup chopped dates
  • 1/2 cup candied red cherries
  • 1 cup coconut
  • 1/2 cup shortening
  • 1 cup plain flour

Instructions

  1. Mix sugars, shortening, egg, and vanilla until well combined.
  2. Add chopped pecans, chopped dates, candied red cherries, coconut, plain flour, baking soda, and baking powder. Mix well.
  3. Preheat oven to 375°F (190°C).
  4. Drop spoonfuls of dough onto an ungreased baking sheet.
  5. Bake for 12 to 15 minutes until golden brown.
  6. Remove from oven and cool before serving.
