Ingredients

  • 7 to 8 large potatoes
  • 1 lb hamburger
  • 1 large onion
  • 1 cup Minute rice
  • 1 teaspoon salt
  • 1 can vegetable soup

Instructions

  1. Butter a baking dish.
  2. Slice the potatoes to cover the bottom of the dish.
  3. Slice the onion and lay the slices across the potatoes.
  4. Cook the Minute rice according to package instructions and spread it on top of the onions.
  5. Cook the hamburger, drain excess fat, and then spread it on top of the rice layer.
  6. Sprinkle salt over the hamburger layer.
  7. Pour the vegetable soup directly from the can over the hamburger.
  8. Pour 1 to 1½ cans of water (using the soup can as a measure) over the casserole.
  9. Cover and bake at 350°F for 1 to 1½ hours.
