Potato Lorraine

Ingredients

  • 4 slices bacon, cooked crisp and drained
  • 2 eggs, beaten
  • 1/4 c. unseasoned bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 medium potatoes (unpeeled), grated
  • 1 c. chopped onion
  • 1 c. shredded Swiss cheese (4 oz.)
  • 1 tsp. paprika

Instructions

  1. Preheat oven to 350°.
  2. Crumble bacon and set aside.
  3. In large bowl, combine eggs, bread crumbs, salt and pepper; mix thoroughly. Stir potatoes and onion.
  4. Pour into buttered shallow 3 cup baking dish.
  5. Top with bacon and cheese.
  6. Dust with paprika.
  7. Bake 20 to 30 minutes or until lightly brown.
  8. Serves two.
