Flavorful potato packets bursting with onion and bell pepper, baked to tender perfection with aromatic seasonings and a hint of lemon, ideal for quick, wholesome meals.

Ingredients

  • 4 medium potatoes
  • 1 medium onion
  • 1 small green bell pepper
  • 4 tsp vegetable oil
  • 1/2 tsp seasoning of your choice (oregano, rosemary, thyme)
  • salt
  • pepper

Instructions

  1. Cut 4 pieces of aluminum foil, each about 12 x 15 inches, and set aside.
  2. Slice unpeeled potatoes into approximately 1/16-inch thick slices.
  3. Toss the potato slices with sliced onion, sliced green bell pepper, vegetable oil, and your choice of seasoning.
  4. Distribute the mixture evenly onto the centers of the 4 foil pieces.
  5. Drizzle lemon juice over each portion.
  6. Wrap each foil piece securely but loosely to form a flat packet.
  7. Place the foil packets seam side up on a baking sheet.
  8. Bake at 450°F (232°C) for about 20 minutes until potatoes are tender.
  9. Serve hot.
