Instructions
- Cut 4 pieces of aluminum foil, each about 12 x 15 inches, and set aside.
- Slice unpeeled potatoes into approximately 1/16-inch thick slices.
- Toss the potato slices with sliced onion, sliced green bell pepper, vegetable oil, and your choice of seasoning.
- Distribute the mixture evenly onto the centers of the 4 foil pieces.
- Drizzle lemon juice over each portion.
- Wrap each foil piece securely but loosely to form a flat packet.
- Place the foil packets seam side up on a baking sheet.
- Bake at 450°F (232°C) for about 20 minutes until potatoes are tender.
- Serve hot.
