Ingredients

  • 1 small white potato
  • 1 lb powdered sugar
  • 1/2 tsp vanilla
  • chunky peanut butter

Instructions

  1. Boil the small white potato in salted water until cooked.
  2. Mash the hot potato and gradually add powdered sugar until the dough can be rolled out.
  3. Add vanilla extract to the mixture during this process.
  4. Roll out the dough on a surface dusted with powdered sugar to about 1/4-inch thickness.
  5. Spread generously with chunky peanut butter.
  6. Roll up the dough and peanut butter filling.
  7. Slice the rolled dough into pieces. The candy keeps very well.
