- Cut the baked potatoes in half.
- Scoop out the insides, leaving about 1/8 inch in the shell.
- Brush the potato skins with melted butter.
- Sprinkle grated Cheddar cheese and crumbled bacon on top of the skins.
- Place the potato skins in a 500°F oven and bake until the cheese is melted and the skins are crisp, about 10 to 12 minutes.
- In a bowl, combine sour cream with minced chives or green onions, salt, and pepper to taste.
- Serve the potato skins with the chive sour cream dip.
