Crispy potato skin appetizers topped with melted cheese, bacon, and served with a flavorful chive sour cream dip, perfect for parties and snack lovers.

Ingredients

  • 8 medium potatoes, baked
  • grated Cheddar cheese
  • 1 cup sour cream
  • salt and pepper to taste
  • melted butter
  • bacon, cooked and crumbled
  • 2 Tbsp minced chives or green onions

Instructions

  1. Cut the baked potatoes in half.
  2. Scoop out the insides, leaving about 1/8 inch in the shell.
  3. Brush the potato skins with melted butter.
  4. Sprinkle grated Cheddar cheese and crumbled bacon on top of the skins.
  5. Place the potato skins in a 500°F oven and bake until the cheese is melted and the skins are crisp, about 10 to 12 minutes.
  6. In a bowl, combine sour cream with minced chives or green onions, salt, and pepper to taste.
  7. Serve the potato skins with the chive sour cream dip.
