Ingredients

  • 6 potatoes
  • 2 stalks celery (optional)
  • 10 slices bacon
  • 1 large onion
  • 2 heaping Tbsp. flour

Instructions

  1. Peel and boil the potatoes in a minimum of water until tender.
  2. If desired, chop up and add celery to the boiling potatoes.
  3. Fry the bacon slices until crispy, then chop into small pieces.
  4. Add the chopped onion to the bacon and fry together until browned.
  5. Drain off all the bacon grease, then return 4 tablespoons of bacon grease to the pot.
  6. Add flour to the bacon grease and cook to make a roux.
  7. Mash the cooked potatoes in the water or drain and add milk or part milk to achieve desired consistency.
  8. Add the roux to the mashed potatoes and stir well.
  9. Season with salt and pepper to taste.
  10. Return the cooked bacon and onions to the soup and mix.
