Instructions
- Cook potatoes in boiling water with salt.
- When soft, run through strainer.
- Boil milk with onions; remove onions and add milk slowly to potatoes, mixing well with whisk. Melt half the butter.
- Add dry ingredients.
- Stir until well mixed, then add to soup.
- Boil 1 minute; add remaining butter and sprinkle with parsley.
- Thin with hot milk, if desired.
