Potato Wraps

Ingredients

  • 8 new potatoes (1 1/2-inch diameter)
  • 1 tsp. seasoned salt
  • 1 tsp. seasoned pepper
  • 1/2 tsp. crushed bay leaf
  • 16 slices bacon, cut in half

Instructions

  1. Wash potatoes and cut in fourths.
  2. Sprinkle each with a mixture of seasonings.
  3. Wrap one piece of bacon around each potato piece.
  4. Sprinkle with any remaining seasonings.
  5. Place in baking dish and bake, uncovered, for 20 minutes or until bacon is crispy and potatoes are done at 400°.
  6. Drain on paper towels. Serve plain or with sour cream and chives.
  7. Recipe can be halved.
