Ingredients

  • 3 lb. chuck roast (1/2-inch cubes)
  • 1 1/2 lb. pork shoulder or loin
  • 1 lb. bacon
  • 3 large onions, chopped
  • 3 garlic cloves
  • 1 bottle chili sauce
  • 1 small can tomato sauce
  • 1 1/2 bell peppers, chopped
  • 1 can Ro-Tel tomatoes
  • 1/3 cup hot picante sauce
  • 2 cans red kidney beans
  • 2 teaspoons oregano
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 small box raisins, chopped fine
  • 1 tablespoon seasoned salt
  • 1/4 teaspoon cayenne pepper
  • Monterey Jack cheese
  • Maza flour
  • 12 oz. beer
  • water

Instructions

  1. Dice and fry the bacon until crispy.
  2. Save the bacon grease.
  3. Saute chopped onions and garlic in the bacon grease until fragrant.
  4. Brown the meat in small portions in the bacon grease.
  5. Combine all ingredients except the cheese and Maza flour in a large pot.
  6. Add water and beer in equal amounts until the desired liquid level is reached.
  7. Bring the chili to a boil, then reduce heat and simmer for 2 hours.
