Ingredients

  • 4 half chicken breasts, boned and skinned
  • flour
  • 1/2 lb. butter
  • 8 oz. mushrooms, thinly sliced
  • 1/2 pt. whipping cream
  • 1/4 c. cream sherry
  • 1/8 tsp. tarragon, rubbed

Instructions

  1. Dredge chicken in flour and brown in half the butter.
  2. Bake at 300° for 1 hour.
  3. Cook mushrooms in remaining half of butter.
  4. Add whipping cream, sherry and tarragon.
  5. Simmer until consistency is like medium-thick gravy (flour can be used to thicken).
  6. Serve over bed of rice.
  7. Serves 4.
