Instructions
- Dredge chicken in flour and brown in half the butter.
- Bake at 300° for 1 hour.
- Cook mushrooms in remaining half of butter.
- Add whipping cream, sherry and tarragon.
- Simmer until consistency is like medium-thick gravy (flour can be used to thicken).
- Serve over bed of rice.
- Serves 4.
