Ingredients

  • 1 lb. prawns or tiger shrimp
  • 2 to 3 Tbsp. cornstarch
  • 1/4 cup oil
  • 4 stalks leeks (white part only)
  • 1 cup tomato sauce
  • 1/2 cup carbonated lemon-lime beverage
  • 1/2 cup water
  • 3 Tbsp. sugar
  • salt

Instructions

  1. Peel and clean prawns, then cut them in halves lengthwise.
  2. Roll the prawns in cornstarch to coat lightly.
  3. Heat oil in a skillet or wok and fry the prawns over high heat until crispy.
  4. Drain the prawns and set aside.
  5. In the same skillet, sauté the white parts of the leeks until fragrant.
  6. Add the tomato sauce, lemon-lime beverage, water, and sugar to the skillet.
  7. Simmer the sauce until it thickens slightly and flavors meld.
  8. Return the fried prawns to the sauce, tossing to coat evenly.
  9. Serve hot with steamed rice or your preferred side.
