Ingredients

  • 2 onions, chopped
  • 1 bell pepper, chopped
  • parsley, minced
  • green onion tops, chopped
  • 1 turnip
  • 2 or 3 ducks
  • bay leaf
  • 2 lb. smoked sausage
  • 1/2 pint oysters
  • oil
  • flour
  • Tabasco

Instructions

  1. Cut the ducks into pieces and brown them in oil.
  2. In a heavy large iron pot, make a very dark roux until it begins to smoke, about 1 minute from burning.
  3. Immediately add chopped onions, chopped bell pepper, and minced garlic.
  4. Cook down until all vegetables are mushy.
  5. Add water if necessary to prevent the roux from burning.
