Pretty Pineapple

A tropical treat that turns canned pineapple into a jiggly, sweet confection, perfect for summer parties or a quick dessert for adventurous eaters.

Ingredients

  • 1 large can sliced pineapple
  • 1 (3 oz.) pkg. Jell-O (any flavor)
  • 1 c. boiling water

Instructions

  1. Drain the syrup from the canned pineapple and leave the fruit in the can.
  2. Dissolve the Jell‑O powder in one cup of boiling water.
  3. Pour the melted Jell‑O into the can over the pineapple.
  4. Chill the can in the refrigerator for at least three hours until set.
  5. When ready to unmold, dip the can in hot water until the gelatin loosens.
  6. Run hot water over the bottom a few times, then cut the bottom off carefully, covering the top with a saucer or hand to catch the fruit.
  7. Slide or push the molded pineapple out of the can.
  8. Turn the piece on its side and slice into servings.
  9. Serve immediately or refrigerate until ready to eat.
