Ingredients

  • 7 Tbsp. cornstarch
  • 1 1/2 c. sugar
  • 1 1/2 c. hot water
  • 1/2 c. lemon juice
  • 3 egg yolks
  • 1/4 tsp. salt
  • 2 Tbsp. butter

Instructions

  1. Mix cornstarch, sugar, and salt thoroughly in a saucepan.
  2. Add hot water and cook over high heat, stirring constantly, until thick and clear.
  3. Remove from stove; add beaten egg yolks.
  4. Return to stove and cook at low heat, stirring constantly for 6 minutes.
  5. Take off stove and add lemon juice and butter.
  6. Cool the mixture.
  7. Pour into a cooled baked pastry shell.
  8. Top with meringue.
