Ingredients

  • 6 Tbsp. white rice
  • 4 1/2 c. whole milk
  • 1 1/2 c. evaporated milk
  • 1 tsp. salt
  • 3 slightly beaten eggs
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg

Instructions

  1. In a double boiler, combine the rice, milk, and salt.
  2. Cook on low heat until the mixture sees just a slight boil, about 1 hour.
  3. Cover with a lid for most of the hour, stirring only a little every 10 minutes.
  4. Ensure the rice is fully cooked before proceeding to the next steps.
  5. In a separate bowl, beat the eggs slightly.
  6. Stir the sugar, vanilla, nutmeg, and cinnamon into the cooked rice mixture.
  7. Gradually add the beaten eggs, stirring constantly to prevent curdling.
  8. Cook gently until the pudding thickens and is heated through.
  9. Serve warm or chilled as desired.
