Ingredients

  • 6 eggs
  • 2 Tbsp lemon juice
  • 1 tsp vanilla
  • 12 packets sweetener
  • 12 oz low-fat cottage cheese
  • cinnamon to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend eggs, vanilla, lemon juice, and sweetener in a blender until smooth.
  3. Gradually add cottage cheese and cinnamon, blending until smooth.
  4. Pour the mixture into a Pam-sprayed pie plate.
  5. Bake for approximately 45 minutes.
  6. Let cool for 30 minutes to 1 hour.
  7. Refrigerate before serving.
