  • 3 heaping tsp. baking powder
  • 1 c. cocoa
  • 1 c. buttermilk
  • 1 c. coffee

Tips & Substitutions

For a lighter texture, sift the dry ingredients before mixing. If you prefer a different fat, you can substitute unsalted butter for Crisco, though the texture may vary slightly. Using brewed espresso instead of regular coffee can intensify the chocolate flavor. Ensure your ingredients are at room temperature for better incorporation, making the mixing process easier and more effective.

Serving Suggestions

Serve these gobs warm for a gooey treat, or let them cool for a firmer cookie. They pair wonderfully with a glass of milk or a cup of coffee, enhancing the rich cocoa flavor. Consider serving them alongside a fresh fruit salad or a scoop of ice cream for a delightful dessert experience. For a unique twist, try them with a slice of Sour Cream Pound Cake Or Jewish Coffee Cake.

Storage & Reheating

Store the gobs in an airtight container at room temperature for up to a week. For longer storage, freeze them in a single layer on a baking sheet, then transfer to a freezer-safe bag or container. To reheat, place them in a preheated oven at 300°F for about 5-10 minutes until warmed through.

Frequently Asked Questions

Can I make these cookies gluten-free?

Yes, you can use a gluten-free all-purpose flour blend in place of regular flour. Make sure the blend includes xanthan gum or add it separately to help bind the ingredients. The texture may differ slightly, but they should still taste delicious.

How can I adjust the sweetness of the cookies?

If you prefer less sweetness, consider reducing the sugar by 1/2 cup. You can also use a sugar substitute like erythritol or coconut sugar. Keep in mind that this may alter the texture slightly, so monitor the baking time as well.

What can I add to these cookies for extra flavor?

You can incorporate chocolate chips, nuts, or even dried fruits like cherries or cranberries for added texture and flavor. A pinch of sea salt on top before baking can also enhance the sweetness and balance the flavors beautifully.
