Pumpkin Chip Preserves

Sweet and spiced pumpkin chip preserves with fragrant cinnamon and cloves, perfect for spreading on toast or serving alongside cheese, ideal for autumnal treats and gift-giving.

Ingredients

  • 2 c. sliced pumpkin
  • 2 c. sugar
  • 1 lemon
  • 1 stick cinnamon
  • 1 tsp. whole cloves
  • 1 c. water

Instructions

  1. Cut slices from a fine high-colored pumpkin.
  2. Peel and cut slices into thin chips.
  3. Take 2 cups of pumpkin slices and put into a large pan, then layer with 2 cups of sugar.
  4. Add 1 thinly sliced lemon and let it set overnight.
  5. In the morning, transfer all to a preserving pan.
  6. Add the stick of cinnamon, cloves, and water.
  7. Bring to a boil and cook until the chips are clear and the syrup is thickened.
  8. Simmer for 30 to 45 minutes.
  9. Seal in sterilized jars.
