A delightful layered pumpkin cake featuring smooth pumpkin, apricot jam, vanilla pudding, and crunchy pecans, perfect for autumn celebrations or cozy gatherings.

Ingredients

  • 1 pound cake
  • 1 can pumpkin
  • 1 jar apricot jam
  • 1 cup vanilla pudding
  • pecans
  • whipped cream

Instructions

  1. Place a slice of pound cake on a serving plate, then spread a thin layer of apricot jam over it.
  2. Add a layer of beaten pumpkin over the jam, then spread whipped cream on top of the pumpkin.
  3. Follow with a layer of vanilla pudding.
  4. Add a second layer of pound cake on top of the fillings.
  5. Gently press the top layer of cake down to set the layers.
  6. Run a line of whipped cream down the middle of the top of the cake.
  7. Sprinkle finely chopped pecans over the whipped cream.
