Ingredients

  • 2 c. butter
  • 3 eggs
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 c. mashed potatoes, cooked
  • 1 tsp. vanilla
  • 1 c. dates
  • 2 c. sugar
  • 2 c. plain flour
  • 1 tsp. cloves
  • 3 Tbsp. cocoa
  • 1/2 c. milk
  • 1 c. raisins

Instructions

  1. Cream the butter and sugar together; add eggs one at a time, mixing well after each addition.
  2. In a separate bowl, mix the plain flour, cinnamon, cloves, baking powder, and cocoa powder.
  3. Gradually add the dry ingredients to the butter and sugar mixture, mixing until combined.
  4. Stir in the mashed potatoes, milk, and vanilla extract until smooth.
  5. In another bowl, combine the flour, raisins, and chopped dates.
  6. Fold the dry fruit mixture into the wet batter until evenly incorporated.
  7. Spoon the batter into three greased cake layer pans.
  8. Bake at 350°F (175°C) for 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool completely, then spread caramel frosting on each layer before stacking.
